Kitchen Adventures: Mexican BLT with Chilies, Guacamole and Salad

No comment. Only drool.

Ingredients: Pancetta (couldn't find, stuck with bacon), Chicken Breast, Oregano, Cumin Seeds, Baguette, Gem Lettuce, Radishes, Feta Cheese, Red Wine Vinegar, Olive Oil, Cilantro, Red Chili, Green Onions, Avocados, Cherry Tomatoes, Limes
Sometimes I feel like Joey on Friends. "What's Joey's favorite food?" "Sandwiches!" I love a good sandwich. This one had us making our own guacamole! It was fresh and fantastic. We used a sourdough baguette. After making the guacamole you spread both sides of the bread with it, load on some crispy chicken breast and bacon, top with chopped romaine and drool.. I mean enjoy! The funniest part is that this delicious sandwich was almost overshadowed by a great salad.. that I didn't even get a picture of! It was chopped romaine, radishes, feta cheese and a dressing of equal parts good olive oil and red wine vinegar. Ian and I devoured it. A good size sandwich and part of the salad was 638 calories. YUM.
